These come from early in the cheese-making process, before the curds are pressed into blocks for ageing.

Deepfried with a bit of salt or other seasoning, they are a heart-attack in a cup.

In Seattle you can also get them with a variety of flavourings in the curds (not deep fried) at Beechers down at the market.
